Today, VELA Phuket Old Town invites you to discover a dining experience tucked away on the second floor of our contemporary space, where the character of Phuket Old Town meets modern lifestyle.
Welcome to Bastosai Omakase & Handroll, a Japanese restaurant where premium ingredients, creative presentation and Chef Bas’s personal approach come together in an intimate dining experience.
With more than eight years of experience in Japanese cuisine, Chef Bas begins the evening with a warm welcome and a cup of green tea. As he quietly prepares the fish and ingredients in front of us, the experience unfolds naturally—one course at a time.

The opening course features Kanpachi with Tosaka Nori, a Japanese seaweed known for its distinctive texture. Ponzu with a gentle yuzu aroma, shiso, jalapeño and salmon roe bring freshness, acidity and contrasting textures to the palate.
Next comes Madai, delicately paired with yuzu and yuzu jelly, followed by Hirame, finished with five-colour sesame for a subtle toasted aroma and added texture.

One of the evening’s highlights is a seasonal creation inspired by the waters around Phuket. Sweet local crab is served as a Temaki, paired with umami-rich nori and caviar. Even the smallest details are carefully considered so the seaweed enhances rather than overwhelms the natural sweetness of the crab.

Then comes Long Tail Boat, a playful creation inspired by Amphawa Floating Market. Lean Akami tuna is paired with Nam Dok Mai mango, sesame oil and a delicate crispy shell shaped like a Thai longtail boat. It is a memorable meeting of Japanese craftsmanship and Thai inspiration.

For us, Bastosai is more than a Japanese restaurant. It is a journey through ingredients, technique and creativity, guided by a chef who continues to explore the cuisine he loves.
If you’re looking for Omakase in Phuket, a Japanese restaurant in Phuket Old Town, or a premium Handroll experience, Bastosai is a destination worth discovering.
